Let's get started! ## Recipe for Roasted Corn Pico de Gallo ##### Ingredients - 2 ears of corn, shucked - 1 jalapeno, seeded and diced - 2 roma tomatoes, diced - 1/3 cup diced red onion - 1/2 teaspoon garlic powder - 1/4 cup fresh cilantro, chopped - 1 lime, juiced - Salt and pepper to taste ##### Instructions 1. Preheat oven to 375 degrees F. 2. Place ears of corn on baking sheet and roast for 15 minutes until lightly charred. 3. Remove from oven and let cool. 4. When cooled, cut kernels off of cobs and place in a medium bowl. 5. Add diced jalapeno, tomatoes, onion, garlic powder, cilantro, and lime juice. 6. Stir to combine. 7. Season with salt and pepper to taste. 8. Serve with tacos, burritos, or as a side dish. Enjoy!
