Natashas White Chicken Chili

Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, diced

  • 1/4 teaspoon freshly ground black pepper
  • 2 (4-ounce) cans diced green chiles, undrained
  • 1 (15-ounce) can white beans, drained and rinsed
  • 6 cups chicken broth
  • 2 cups cooked, shredded chicken
  • 1/2 cup sour cream
  • 1 (8-ounce) package cream cheese, softened and cubed
  • 1/2 cup freshly grated cheddar cheese
  • 2 tablespoons freshly chopped cilantro

Instructions

Heat the oil in a large pot over medium heat. Add the onion and bell pepper and cook for 3 minutes, stirring frequently. Add the garlic, cumin, oregano, salt, and pepper and cook for 1 minute. Add the green chiles, beans, chicken broth, and chicken and bring to a boil. Reduce the heat to low and simmer for 30 minutes, stirring occasionally.

Stir in the sour cream and cream cheese until melted and smooth. Simmer for 10 minutes, stirring occasionally. Add the cheddar cheese and cilantro and season with salt and pepper, to taste. Simmer for 5 minutes more. Serve hot with your favorite toppings.
