Let's get cooking! h2 Farro and Mushroom Gratin h3 Ingredients -1 cup farro -4 cups vegetable stock -2 tablespoons olive oil -1 small onion, diced -2 cloves garlic, minced -1 ½ cups mushrooms, sliced -1 teaspoon dried thyme -2 tablespoons all-purpose flour -1 cup vegetable cream -½ cup white wine -2 tablespoons fresh parsley, chopped -Salt and pepper, to taste h3 Instructions 1. Preheat the oven to 375°F. 2. In a pot, bring the vegetable stock to a boil. Add the farro, reduce to a simmer, and cook for 20 minutes or until tender. Strain the farro and set aside. 3. Heat the olive oil in a large skillet over medium-high heat. Add the onion and garlic and cook until softened, about 5 minutes. 4. Add the mushrooms to the skillet, season with thyme, salt, and pepper, and cook until the mushrooms are golden brown, about 8 minutes. 5. Reduce the heat to medium and add the flour. Stir well and cook for 1 minute. 6. Slowly pour in the vegetable cream, stirring constantly. Stir in the white wine and cook until the sauce has thickened, about 8 minutes. 7. Add the cooked farro to the skillet along with the parsley. Stir everything together and season with salt and pepper. 8. Transfer the mixture to a greased baking dish and bake for 25 minutes or until the top is golden brown. 9. Serve the Farro and Mushroom Gratin warm. Enjoy!
